Feed your soul. Deliciously hand-crafted from non-GMO ingredients, our organic sourdough is fermented in-house for 72 hours. That’s how we break starches down into an easy-to-digest pizza base. Then, we dress things up with fresh and fabulous toppings—natural, organic and unprocessed goodness. Gluten-free dough always on offer, too.

  • Our name comes from barrel (Bottē being the Italian word for barrel), like the roofline that inspired our building. And wine. We love wine, and we’re excited to keep growing our wine offerings. It’s a nod to tradition, craftsmanship, and good times shared around a table.

  • We like to keep things simple. Counter service means less waiting, more connecting: quickly grab your order, find your people, and settle in. It’s also how we make space for young locals to get their first jobs.

  • Health-focused from the start. No microwave, no fryer, no shortcuts. Every dish is made fresh, by hand, using real ingredients.

  • It’s a three-day process that starts with organic flour, a 130-year-old sourdough starter, and natural mineral water. We ferment our dough for 72 hours to make it light, digestible, and full of flavour.

  • No sugar, no blending, no tricks. Clean, simple, and bright, exactly how it should be. We add only olive oil and a touch of salt, using the best quality Italian tomatoes we can find.

  • Yes! We bake our gluten-free crusts in a completely separate oven to avoid cross-contamination, and we offer vegan cheese for any pizza on the menu.

  • Of course. Bottē is made for gathering. We offer a family-style option where everything hits the middle of the table: pizzas, salads, sandwiches, and good times.

  • We source as close to home as possible — from local partners like Terra Agri and Le Verger de Hudson Bio — because clean, fresh ingredients make all the difference.
